In The Mandalorian tv show, these characters commandeered these vehicles to avenge their loved ones, and desecrate the ultimate enemy of democracy and freedom: The Empire. After The Klattoonian raiders commandeered this imperial AT-ST (the good whole set +an extra Raider Minifigure): 75254-45$) they used it to dominate indigenous tribes on the planet in which Din Djarin and Cara Dune were concealing Grogu. Later on, Greef Karga helped Din battle pirates (minifigures unavailable) to commandeer an Imperial Armored Marauder (partial set:75311, most of the parts and minifigures-45$) to infiltrate an Imperial base. Stormtroopers were easily outwitted in this of course, but soon enough Din lost his his identity (by removing his helmet) and nearly lost his life too!
