good This Zhen bread knife is made from Japanese high carbon stainless steel heat treated to Rc 54-56. the knife features a granton edge to help prevent sticking. The blade is 9 1/2" long with an overall length of 14 5/8". The handle is maple burl with a purple composite material and is attached with 3 cutlery rivets.
